Is it possible to have an account in my portfolio whose market value would
not be added to my overall Net Worth, because it is only a paper account
(i.e., a watch account)?

You can exclude as many accounts as you like from your Net Worth
without regard to underlying purpose. Customize the Net Worth
report (or any other report indicating net worth or account
balances, etc.) to exclude the account. If it is a report you
want to see repeatedly, memorize it.

Quicken does offer the ability to have securities which are
tracked for price only; Quicken calls it the "Watch List". If
you check the "Watch" box for the security in the Security List
it should appear in the "Watch List" in the Portfolio View.
