How to handle Sales Tax manually in Quickbooks Pro? |

I am new to Quickbooks Pro and am trying to enter all my data (after the fact) for the year strictly for accounting purposes and reports. (I'm currently entering data using QB Pro 2001 but I've bought QB Pro 2006)
I have done OK until I came to entering income and sales tax. I've done all my sales tax returns manually when due, and already paid the taxes.
Is there a way for me to post income and sales tax received in Quickbooks WITHOUT having to set up Quickbooks to calculate the Sales Tax? I have a myriad of tax rates, and I don't want to set Quickbooks up for all of that, I just want to tell QB what I took in for Sales Tax and what is net income from a particular day's sales based on my POS software, and then have it let me write a check for that sales tax (and somehow deal with any vendor collection fees, etc. that are left over as income.)
Can this be done and still have Quickbooks (and an accountant) be happy and accurate with how everything is being reported by the program? If so, how exactly do I enter a sale that has a combination of product sale, sales tax and shipping, and how do I show payment of the Sales Tax?
