Would someone tell me the keystroke, if one exists, for repeating the
payee from the last registry entry for the new one I'm in.

I'm hoping for a key like some other programs have such as CTRL+D to
fill down from the previous field or CTRL+" to repeat in the current
field what was entered in that field of the last record entered. So,
for example, once I finalize a registry entry where ABC Supplies is the
payee, I then start a new one, and once in the payee field I'd like a
keystroke that would quickly enter ABC Supplies again.

I know about the auto-complete mechanism, but looking for something
more efficient.
