It has only just come to light that I need to do this some 3 months after a
I paid a bill from a supplier using a credit note and a small cheque. How
can I apply the credit notes and cheque to another bill from the supplier?

Void the credit note and save it. Then re-open it and re-enter the
original amount. Then apply it to another bill.
